Pound the chicken breasts to an even thickness using a meat mallet.
In a mixing bowl, combine cassava flour, garlic powder, onion powder, sea salt, and black pepper (if using).
Coat each chicken breast evenly in the seasoned cassava flour mixture.
Heat coconut oil in a skillet over medium heat.
Fry the chicken for about 6-7 minutes per side until golden brown and fully cooked through.
Remove from the skillet and let rest for a few minutes before serving.

This AIP-friendly schnitzel is perfect served with roasted vegetables or a fresh salad. You can also use arrowroot flour instead of cassava for a lighter coating.
