Ingredients
  

Chicken Schnitzel

  • 2 pieces chicken breast pounded thin
  • 1 cup cassava flour
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper omit for strict AIP
  • 2 tbsp coconut oil for frying

Instructions
 

  • Pound the chicken breasts to an even thickness using a meat mallet.
  • In a mixing bowl, combine cassava flour, garlic powder, onion powder, sea salt, and black pepper (if using).
  • Coat each chicken breast evenly in the seasoned cassava flour mixture.
  • Heat coconut oil in a skillet over medium heat.
  • Fry the chicken for about 6-7 minutes per side until golden brown and fully cooked through.
  • Remove from the skillet and let rest for a few minutes before serving.

Notes

This AIP-friendly schnitzel is perfect served with roasted vegetables or a fresh salad. You can also use arrowroot flour instead of cassava for a lighter coating.
