mashed bananas
about 2 medium, very ripe bananas
Instructions
Preheat oven to 350F (not fan-assisted/convection). If using a glass pan, reduce oven temperature by 25F.
Grease an 8.5 x 4.5-inch metal loaf pan and line it with parchment paper for easy removal.
In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
In a large bowl, use a mixer to cream together the butter and sugar until light and fluffy (about 2-3 minutes).
Add the eggs one at a time, beating well between each addition.
With the mixer on low, alternately add the flour mixture and mashed bananas (start and end with flour).
Pour the batter into the prepared loaf pan and smooth the top.
Bake for 45-55 minutes, or until a tester inserted into the center comes out clean. Start checking at 40 minutes.
Let the banana bread cool in the pan for 10 minutes, then remove it and allow to cool completely before slicing.
Notes
For extra flavor, add 1 teaspoon of cinnamon or vanilla extract. You can also fold in chocolate chips or chopped nuts for a delicious twist!
