Banana Bread with Just Two Bananas

Ingredients
  

Dry Ingredients

  • 1 3/4 cups all-purpose flour spooned and leveled
  • 2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp salt reduce slightly if using salted butter

Wet Ingredients

  • 1/3 cup butter at room temperature
  • 2/3 cup white sugar
  • 2 large eggs at room temperature
  • 1 cup mashed bananas about 2 medium, very ripe bananas

Instructions
 

  • Preheat oven to 350F (not fan-assisted/convection). If using a glass pan, reduce oven temperature by 25F.
  • Grease an 8.5 x 4.5-inch metal loaf pan and line it with parchment paper for easy removal.
  • In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  • In a large bowl, use a mixer to cream together the butter and sugar until light and fluffy (about 2-3 minutes).
  • Add the eggs one at a time, beating well between each addition.
  • With the mixer on low, alternately add the flour mixture and mashed bananas (start and end with flour).
  • Pour the batter into the prepared loaf pan and smooth the top.
  • Bake for 45-55 minutes, or until a tester inserted into the center comes out clean. Start checking at 40 minutes.
  • Let the banana bread cool in the pan for 10 minutes, then remove it and allow to cool completely before slicing.

Notes

For extra flavor, add 1 teaspoon of cinnamon or vanilla extract. You can also fold in chocolate chips or chopped nuts for a delicious twist!
