Instructions
In a large pot, melt the butter over medium heat. Add the diced onion and cook until softened, about 3 minutes.
Add the minced garlic and cook for 1 more minute until fragrant.
Stir in the flour and cook for 1-2 minutes, stirring constantly, to create a roux.
Gradually whisk in the chicken broth until smooth. Bring to a simmer.
Add the shredded chicken and chopped broccoli. Cook for 10 minutes until the broccoli is tender.
Reduce heat to low and stir in the heavy cream and shredded cheddar cheese. Stir until the cheese is melted and the soup is creamy.
Season with salt and black pepper to taste. Serve hot with extra cheese on top if desired.
Notes
For a thicker soup, you can blend half of the soup and mix it back in. Serve with crusty bread for a complete meal!
