Ingredients

  • 2 tbsp butter
  • 1 onion diced
  • 2 cloves garlic minced
  • 2 tbsp all-purpose flour
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups cooked chicken shredded
  • 2 cups broccoli florets chopped
  • 2 cups cheddar cheese shredded
  • 1/2 tsp black pepper
  • 1 tsp salt adjust to taste

Instructions
 

  • In a large pot, melt the butter over medium heat. Add the diced onion and cook until softened, about 3 minutes.
  • Add the minced garlic and cook for 1 more minute until fragrant.
  • Stir in the flour and cook for 1-2 minutes, stirring constantly, to create a roux.
  • Gradually whisk in the chicken broth until smooth. Bring to a simmer.
  • Add the shredded chicken and chopped broccoli. Cook for 10 minutes until the broccoli is tender.
  • Reduce heat to low and stir in the heavy cream and shredded cheddar cheese. Stir until the cheese is melted and the soup is creamy.
  • Season with salt and black pepper to taste. Serve hot with extra cheese on top if desired.

Notes

For a thicker soup, you can blend half of the soup and mix it back in. Serve with crusty bread for a complete meal!
