- 12 oz 340g pasta (spaghetti, linguine, or penne)
- 2 ripe avocados
- 1/4 cup fresh basil leaves
- 2 cloves garlic minced
- 2 tablespoons lemon juice
- 1/4 cup olive oil
- 1/4 cup grated Parmesan cheese optional
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon red pepper flakes optional
- 1/4 cup pasta water reserved
Cook Pasta: Bring a large pot of salted water to a boil and cook the pasta according to package instructions. Reserve 1/4 cup of pasta water before draining.
Make the Sauce: In a blender or food processor, blend avocados, basil, garlic, lemon juice, olive oil, Parmesan (if using), salt, and black pepper until smooth. Add pasta water if needed for a thinner consistency.
