  • 400 g Italian sausage sliced or crumbled
  • 1 onion diced
  • 3 cloves garlic minced
  • 1 tsp Italian seasoning
  • 1/2 tsp red pepper flakes optional
  • 1 cup carrots sliced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup Parmesan cheese grated
  • 2 cups baby spinach
  • 1 tbsp cornstarch mixed with 2 tbsp water
  • 1/2 tsp black pepper
  • 1 tsp salt adjust to taste

Instructions
 

  • In a large pot, cook the Italian sausage over medium heat until browned and fully cooked. Drain excess fat.
  • Add the diced onion, garlic, Italian seasoning, and red pepper flakes. Sauté for 2 minutes.
  • Stir in the sliced carrots and cook for another 2-3 minutes.
  • Pour in the chicken broth and let the soup simmer for 10 minutes until the carrots are tender.
  • Stir in the heavy cream and Parmesan cheese. Let simmer for 5 more minutes.
  • Add the cornstarch slurry to thicken the soup slightly.
  • Finally, stir in the baby spinach and cook until wilted. Season with salt and black pepper to taste.
  • Serve hot, optionally topped with extra Parmesan cheese.

This creamy soup pairs perfectly with crusty bread or garlic toast. Adjust spice levels to your preference!
