Instructions
In a large pot, cook the Italian sausage over medium heat until browned and fully cooked. Drain excess fat.
Add the diced onion, garlic, Italian seasoning, and red pepper flakes. Sauté for 2 minutes.
Stir in the sliced carrots and cook for another 2-3 minutes.
Pour in the chicken broth and let the soup simmer for 10 minutes until the carrots are tender.
Stir in the heavy cream and Parmesan cheese. Let simmer for 5 more minutes.
Add the cornstarch slurry to thicken the soup slightly.
Finally, stir in the baby spinach and cook until wilted. Season with salt and black pepper to taste.
Serve hot, optionally topped with extra Parmesan cheese.
