Ingredients
  

For the Chicken

  • 4 pieces Boneless, skinless chicken breasts
  • 1 tsp Salt & Pepper to taste
  • 1 tsp Garlic powder
  • 2 tbsp Olive oil for searing

For the Potatoes

  • 2 lbs Baby potatoes or Yukon Gold potatoes halved
  • 4 cloves Garlic minced
  • 0.5 cups Freshly grated Parmesan cheese
  • 2 tbsp Fresh parsley chopped, for garnish

For the Garlic Parmesan Sauce

  • 3 tbsp Unsalted butter
  • 3 cloves Garlic minced
  • 1 cup Heavy cream
  • 1.5 cups Grated Parmesan cheese
  • 1 tsp Italian seasoning
  • Salt & Pepper to taste

Instructions
 

  • Preheat the oven to 400°F (200°C).
  • Season the chicken breasts with salt, pepper, and garlic powder.
  • Heat olive oil in a large skillet over medium-high heat. Sear the chicken on both sides until golden brown (about 2-3 minutes per side). Remove and set aside.
  • In a mixing bowl, toss the halved potatoes with minced garlic, salt, pepper, and a drizzle of olive oil.
  • Arrange the potatoes in the skillet and bake for 20 minutes.
  • In a separate saucepan, melt butter over medium heat. Add minced garlic and sauté until fragrant.
  • Pour in the heavy cream and bring to a simmer. Stir in the grated Parmesan cheese, Italian seasoning, salt, and pepper. Keep warm on low heat.
  • Remove the skillet with potatoes from the oven. Place the seared chicken back into the skillet.
  • Pour the garlic Parmesan sauce over the chicken and potatoes. Sprinkle additional Parmesan cheese on top.
  • Bake for another 15-20 minutes until the chicken reaches an internal temperature of 165°F (74°C) and the potatoes are tender.
  • Garnish with chopped parsley and serve hot.

Notes

For a spicier version, add red pepper flakes to the sauce.
