Ingredients
  

Grilled Chicken

  • 1 lb Boneless, Skinless Chicken Thighs or substitute with butterflied and pounded chicken breasts
  • 0.5 cup Vinegar-Based Salad Dressing e.g., balsamic vinaigrette, Italian dressing
  • Kosher Salt & Freshly Cracked Black Pepper to taste

To Serve

  • 4 Pitas or substitute with naan or preferred flatbread
  • 0.5 English Cucumber chopped
  • 1 pint Cherry Tomatoes halved
  • 1 cup Arugula
  • 0.5 cup Red Onion Pickles or use plain sliced red onion
  • 1 Ripe Avocado cubed
  • 0.5 cup Tzatziki homemade or store-bought
  • 4 oz Crumbled Feta

Instructions
 

  • Season the chicken thighs with salt and pepper. Place them in a shallow dish and marinate with the salad dressing for 15 minutes to an hour.
  • Preheat your grill or skillet to medium-high heat. Grill the marinated chicken thighs until they reach an internal temperature of 165°F (74°C).
  • Allow the cooked chicken to rest, tented with foil, for 10 minutes. Meanwhile, warm the pitas.
  • Chop the rested chicken into bite-sized pieces.
  • Assemble the pita wraps by spreading 2 tablespoons of tzatziki on each pita. Add chicken, cucumber, tomatoes, arugula, red onion pickles, avocado, and feta.
  • Fold the pita around the fillings and enjoy your delicious chicken pita wrap!

Notes

For extra flavor, add a squeeze of lemon juice or a sprinkle of fresh herbs like parsley or mint. You can also add crispy fries inside for a traditional gyro twist.
