Ingredients
  

  • 1 wild turkey breast (2-3 pounds)
  • 3 tablespoons butter, softened
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh thyme leaves
  • 1 tablespoon fresh rosemary, chopped
  • 1 teaspoon lemon zest
  • Salt and black pepper to taste

Instructions
 

  • Preheat oven to 325°F.
  • Mix butter with herbs, garlic, lemon zest, salt, and pepper.
  • Rub the mixture under the skin and all over the turkey breast.
  • Place the turkey in a roasting pan and drizzle with olive oil.
  • Roast for approximately 20 minutes per pound, or until the internal temperature reaches 160°F.
  • Let rest for 15 minutes before slicing. The internal temperature will rise to 165°F while resting.

Notes

For extra flavor, consider marinating the turkey breast overnight with olive oil, lemon juice, and fresh herbs.
