Instructions
Heat olive oil in a large pot over medium heat. Sauté onions until soft, then add garlic, Italian seasoning, and red pepper flakes.
Stir in the sun-dried tomatoes and cook for another minute.
Pour in the chicken broth and add the chicken breast. Bring to a boil, then reduce heat and simmer for 15 minutes until the chicken is fully cooked.
Remove the chicken, shred it using two forks, and return it to the pot.
Stir in the heavy cream and Parmesan cheese, letting the soup simmer for another 5 minutes.
Mix in the cornstarch slurry to thicken the soup. Stir until well combined.
Finally, add the baby spinach and cook until wilted. Season with salt and black pepper to taste.
Serve hot with crusty bread or over rice for a heartier meal.
