Ingredients
  

Soup Base

  • 2 tbsp olive oil
  • 1 onion diced
  • 3 cloves garlic minced
  • 1 tsp Italian seasoning
  • 1/2 tsp red pepper flakes optional
  • 1/2 cup sun-dried tomatoes chopped
  • 4 cups chicken broth
  • 1 lb chicken breast boneless, skinless
  • 1 cup heavy cream
  • 1/2 cup Parmesan cheese grated
  • 2 cups baby spinach
  • 1 tbsp cornstarch mixed with 2 tbsp water
  • 1/2 tsp black pepper
  • 1 tsp salt adjust to taste

Instructions
 

  • Heat olive oil in a large pot over medium heat. Sauté onions until soft, then add garlic, Italian seasoning, and red pepper flakes.
  • Stir in the sun-dried tomatoes and cook for another minute.
  • Pour in the chicken broth and add the chicken breast. Bring to a boil, then reduce heat and simmer for 15 minutes until the chicken is fully cooked.
  • Remove the chicken, shred it using two forks, and return it to the pot.
  • Stir in the heavy cream and Parmesan cheese, letting the soup simmer for another 5 minutes.
  • Mix in the cornstarch slurry to thicken the soup. Stir until well combined.
  • Finally, add the baby spinach and cook until wilted. Season with salt and black pepper to taste.
  • Serve hot with crusty bread or over rice for a heartier meal.
