Ingredients
  

Base Ingredients

  • 1 tbsp olive oil
  • 1 large onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 6 cups vegetable or chicken broth low sodium

Optional Add-ins

  • 2 cups butternut squash, peeled and cubed
  • 1 cup kale or spinach, chopped
  • 1 cup cooked chicken, shredded for non-vegetarian option
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1 cup dry lentils or beans, rinsed
  • 1 cup pasta or rice
  • to taste salt and freshly ground black pepper

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add onions, carrots, and celery. Sauté for 5 minutes until softened.
  • Add garlic and cook for another minute.
  • Pour in broth and bring to a boil.
  • Add optional ingredients such as butternut squash, lentils, or pasta. Reduce heat and simmer for 30 minutes.
  • Season with thyme, rosemary, cumin, paprika, salt, and pepper. Stir well.
  • Serve hot and enjoy!
