  • 400 g spaghetti
  • 100 g unsalted butter
  • 250 ml heavy cream
  • 150 g freshly grated Parmesan cheese
  • 2 cloves garlic finely chopped
  • 1 pinch nutmeg freshly grated
  • to taste salt and freshly ground black pepper

For Garnish

  • 2 tbsp freshly chopped parsley

Instructions
 

  • Bring a large pot of salted water to a boil. Cook the spaghetti according to package instructions until al dente. Reserve about a cup of pasta water, then drain the spaghetti.
  • While the spaghetti is cooking, melt the butter in a large skillet over medium heat. Add the chopped garlic and sauté for about 1 minute until fragrant but not browned.
  • Pour the heavy cream into the skillet, stirring constantly, and bring to a gentle simmer. Reduce the heat and gradually stir in the grated Parmesan until the sauce is smooth and creamy.
  • Season the sauce with freshly grated nutmeg, salt, and freshly ground black pepper to taste. If the sauce is too thick, add some of the reserved pasta water until the desired consistency is reached.
  • Add the cooked spaghetti to the skillet and toss to coat the pasta evenly with the sauce.
  • Serve the Spaghetti Alfredo on plates, garnish with freshly chopped parsley, and enjoy immediately.

Notes

For variations, consider adding cooked chicken strips, shrimp, or steamed vegetables like broccoli. For a lighter version, substitute half of the heavy cream with milk.
