Spicy Meatloaf Recipe

Ingredients
  

Meatloaf

  • 1 1/2 lbs ground beef 85% lean
  • 1 egg beaten
  • 3/4 cup breadcrumbs panko or regular
  • 1/2 cup milk
  • 1 jalapeño finely chopped
  • 1 small onion finely diced
  • 2 cloves garlic minced
  • 1 tbsp Worcestershire sauce
  • 1 tsp smoked paprika
  • 1 tsp chili powder
  • 1/2 tsp cayenne pepper adjust for spice level
  • 1 tsp salt
  • 1/2 tsp black pepper

Spicy Glaze

  • 1/2 cup ketchup
  • 1 tbsp hot sauce adjust to taste
  • 1 tbsp brown sugar
  • 1 tsp apple cider vinegar

Instructions
 

  • Preheat the oven to 375°F (190°C). Lightly grease a loaf pan.
  • In a large mixing bowl, combine the ground beef, beaten egg, breadcrumbs, milk, jalapeño, onion, garlic, Worcestershire sauce, and all spices. Mix until just combined.
  • Shape the meat mixture into a loaf and place it in the prepared loaf pan.
  • In a small bowl, whisk together ketchup, hot sauce, brown sugar, and apple cider vinegar to make the spicy glaze.
  • Spread half of the glaze over the top of the meatloaf.
  • Bake for 45 minutes, then spread the remaining glaze over the meatloaf and bake for another 15 minutes, or until the internal temperature reaches 160°F (71°C).
  • Let the meatloaf rest for 5-10 minutes before slicing and serving.

Notes

For an extra smoky flavor, add a teaspoon of chipotle powder to the glaze. Serve with mashed potatoes or roasted vegetables for a hearty meal!
