Turmeric Ginger Immunity Soup

Ingredients
  

Main Ingredients

  • 1 tbsp olive oil
  • 1 onion chopped
  • 3 cloves garlic minced
  • 1 tbsp fresh ginger grated
  • 1 tsp ground turmeric or 1 tbsp fresh turmeric, grated
  • 1 tsp ground cumin
  • 4 cups vegetable broth
  • 2 cups carrots chopped
  • 1 cup sweet potato peeled and diced
  • 1/2 tsp black pepper boosts turmeric absorption
  • 1 tsp salt adjust to taste
  • 1 tbsp lemon juice freshly squeezed
  • 1/4 cup coconut milk optional, for creaminess
  • 2 tbsp fresh cilantro chopped, for garnish

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add the chopped onion and sauté for 3-4 minutes until softened.
  • Stir in the garlic, ginger, turmeric, and cumin. Cook for another minute until fragrant.
  • Add the chopped carrots, sweet potato, vegetable broth, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 15-20 minutes until vegetables are tender.
  • Use an immersion blender or transfer to a blender to puree the soup until smooth.
  • Stir in the lemon juice and optional coconut milk for extra creaminess.
  • Serve hot, garnished with fresh cilantro.

Notes

This soup is rich in antioxidants and great for supporting immunity. Serve with whole grain bread or enjoy on its own!
