  • 2 tbsp olive oil plus extra for drizzling
  • 1 tsp lemon zest
  • 1 tbsp lemon juice freshly squeezed
  • 1/2 tsp salt adjust to taste
  • 1/4 tsp black pepper
  • 1 tbsp honey optional for a hint of sweetness
  • 2 tbsp chopped fresh herbs such as basil, thyme, or chives

Instructions
 

  • Add ricotta cheese, olive oil, lemon zest, lemon juice, salt, and black pepper to a food processor or blender.
  • Blend until smooth and creamy, about 1-2 minutes.
  • Transfer to a serving bowl and drizzle with extra olive oil and honey, if using.
  • Sprinkle with chopped fresh herbs for garnish.
  • Serve with toasted bread, crackers, or fresh vegetables.

Notes

For extra flavor, try adding roasted garlic, red pepper flakes, or a drizzle of balsamic glaze. Store leftovers in an airtight container in the refrigerator for up to 3 days.
